Mom mom’s Ice Box cake.
Once in a while in the summer time, when I was a little girl,
my grandmother would surprise us with an ice box cake.
How special those memories are to me today.
Now I make Mom mom’s ice box cake with our children.
They love to layer the lady fingers.
And making the chocolate to drizzle on top of each layer is
just delightful! Even my big kids think so.
This time Evan wanted to make the cake for his friends,
but he wouldn’t let me take his picture.
After you build it and chill it, it comes out looking like this.
Then you frost it with whipped heavy cream.
Delectable.
Here’s a picture of Evan having lunch with his friends and
a couple of his brothers…, and his oh so fun Dad and baby
sis.
For those of you who’d like to try our ice box cake, I’ve
posted the recipe below.
Mom mom’s Ice Box Cake
- 8 eggs
- 5 doz lady fingers
- 5 bars german sweet chocolate
- 1 pint heavy cream
- 1 box 10x sugar
- 2 teaspoons vanilla
- 2 tablespoons water
Line 9″ baking pan or dish with wax paper. Split lady fingers and line bottom and sides of dish. Beat egg yolks to a fine smooth consistency and until they are light and foamy. Beat egg whites to a good peak. Melt chocolate. Add water. (Here’s where I have a problem. When I add the water, the chocolate thickens up too much. Perhaps you candy makers can enlighten us.) When chocolate is melted and hot, add yolks and stir well. Then add egg whites. Blend in well. Do not beat. Add 1 teaspoon vanilla. Poor chocolate mixture over bottom layer of lady fingers, and add layers to top of side fingers. Save 3/4 dozen to top off cake. Place in refrigerator over night to cool and set.
Frosting
Beat 1 pint of heavy cream with 1 teaspoon vanilla and a box of 10x sugar until stiff and peaked. Turn out cake from pan to a plate. Remove wax papers. Frost with whipped cream.
Makes approximately 12 1″ servings. Cut in half and slice.
